If you ever make it to this part of Thailand, skip the tourist traps of Pattaya for a day. Drive 30 minutes north. Eat the squid on the pier. Watch the sunset over the cargo ships. And pour that thin, sweet, local chili sauce all over your rice.

However, the name —and the original, sweeter, runnier soul of the sauce—comes from a sleepy fishing port on the Gulf of Thailand called (usually spelled Sriracha on Western maps).
